Tasting
Wine lovers and curious visitors alike are invited to discover the world of Mas du Novi through a guided tasting of 12 organic wines.
In our new cellar, nestled among the vines and overlooking the sea, explore our entire range: a rosé from the Languedoc AOC, two white wines (Chardonnay and Viognier) from the Pays d’Oc IGP, and seven red wines from the Languedoc – Grés de Montpellier AOP.
Each of our wines comes exclusively from the estate's vineyards, cultivated at altitude, where the fresh sea breeze balances the richness of the Mediterranean climate. Our intentionally low yields result in concentrated, elegant, and balanced wines, regularly recognized in prestigious international competitions.
Driven by a small team of passionate individuals present at every stage, Mas du Novi offers a warm and attentive experience, ideal for discovering the true expression of our terroir and our dedication to winemaking.

"A historic estate" The Romans settled here, preceding the Cistercian lay monks who, from the 11th century until the French Revolution, produced wine in this Novitiate, hence the name Novi. Siste et ora viator (Sit and pray, traveler) Inscribed on the foundation of a Calvary in the estate's grounds, this site was once a refuge for pilgrims on the Way of St. James, following the Via Arlatensis. "Contemporary wines" Today, it is a 100-hectare estate, 50 of which are organically farmed, nestled in a ring of scrubland offering stunning views of the sea and the Thau lagoon. It is one of the leading wines in the Grés de Montpellier and IGP Oc ranges. The wines of the Mas reflect its arid terroir swept by the tramontane wind and sea spray, combining generosity and freshness. We constantly seek to express the power and richness of the terroir while maintaining great drinkability. To fully appreciate our wines, you will have to take the time recommended by the ancient Cistercians, guardians of the estate: “Siste et ora Viator”
