The art of distillation For the Pisoni family, grappa distillation is an art. There are no schools that teach how to distill; progress in this field is given by the combination of experience and experimentation. The modern distillery, renovated in 2003 and designed directly by the owners, is the result of a technological evolution guided by four generations who have brought their contribution of innovation combined with the experience handed down. From the first small copper stills of the late nineteenth century, which were fueled by wood fire, we have arrived at the current steam-powered plant, of which you can admire the bain-marie boilers surmounted by splendid columns, also rigorously made of copper. An important contribution to this evolution was given by Tullio Zadra (1905/1991), a master coppersmith from Trentino, as well as father-in-law of Arrigo Pisoni, known for having introduced the bain-marie distillation method with plate rectification columns in Trentino. Some parts of the plant still bear the label of his renowned workshop. TrentoDoc Trentodoc is the classic method sparkling wine from Trentino. It is a special wine because it is subjected to the fascinating “classic method” production process that requires a lot of skill, a lot of passion and long waits. Pisoni and Trentodoc The production of Pisoni Trentodoc is cared for as a precious family treasure. The Pisonis, among the first producers in Trentino and among the founding members of the Trento Doc Institute.
